Coffee and cake

Meeks has decided to catch up with friends by posting her coffee and cake. I am missing the catch ups with friends too, usually down at the local coffee shop. So let’s chat over a morning cuppa.

I have used the tea cup my Mum gave me for my birthday.

The cake is a German apple cake, although don’t ask me why ‘German’ (the apple is obvious!) My friend, with whom I often have coffee, recently came out of the mandatory 14 day quarantine at a hotel chain, after returning form overseas. Each day she and her husband were given two pieces of fruit each. The fruit mounted up. They knew that it would be thrown out if they left it, so, brought it with them when they were released into the fresh air. I received a bag of apples.

I pulled out the Nursing Mum’s Cookbook, which is one of those fabulous cookbooks with every basic recipe you could ever want. The cake is very tasty!

GERMAN APPLE CAKE

Cake

  • 125 gm butter
  • 90gm sugar
  • 1 cup plain or self-raising flour, sifted
  • 1 egg

Filling

  • 3 cooking apples
  • 2 tablespoons sultanas
  • 1 tablespoon raw sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • juice of 1 lemon

Cake: Melt butter in a large saucepan, add sugar and stir until it is beginning to dissolve. Add flour and stir well, beat in egg. Grease a 7″ cake tin and using fingers spread a little more than half the mixture over the bottom.

Filling: Peel, core and slice apples, place half of these in layers over the cake mixture. Mix together sultanas, sugar and spices and sprinkle over apple slices. Cover with rest of the apple slices. sprinkle with lemon juice. Spread resining cake mixture on top, in spoonfuls.

Cook in a moderate oven for 45 minutes.

Oh wow…Anne! This apple cake looks absolutely divine. I am so going to give it a go. I’ve got to try out the French silk chocolate pie this weekend, but apple cake is next on my list. Heaven knows what my waistline is going to look like by the end of this pandemic! lol

The cake was delicious, and I agree with you about the waistline. I have the added dilemma of needing to make sure the Fella is eating, and hopefully putting on weight. So I am tempting him with treats like this, and it would be rude not to eat with him, wouldn’t it?
French silk chocolate pie sounds exotic. Let me know how that one goes.

What a lovely idea! A neighbor and I, both dignified ladies of a certain age, until this current pandemic and stay-at-home orders had weekly Coffee & Politics meetings at a local cafe. The yumalicious pastries available were a bonus! I would very much like to give your recipe a try and I think that your measurements equals a little more than a stick of butter and 1/2 cup of sugar. If plain flour, does it need any other ingredient like baking powder? I do not have sultanas, do you think that plain old raisins will do? Sorry for my questions, as you most likely can tell I am not a from scratch baker! You have a lovely tea cup! Thank-you!

i love “dignified ladies of a certain age”! You must be missing your chats with your friend; it is not the same over the phone, is it?
I googled the stick of butter to find out it is 113 gm. So a stick and a little more would be fine. I am not sure about the flour. I used self-raising flour but I wondered whether plain flour would need baking powder. I would add 1/2 teaspoon if I was using plain. Or, if I was feeling lazy, which I could well be (!) I would just use the flour.
Don’t worry if the second layer of cake mixture doesn’t cover the whole thing. I dolloped it on and then spread it out over the apples. Some of the apples poked through and it baked perfectly well, even added a little rustic charm (or that’s what I say!).
As for the dried fruit, use whatever you have. I think I added in chopped dates.

The cake does look lovely. I went to pick up supplies of fresh stuff this morning and saw a couple of friends – we stood well apart and chatted but it wasn’t the same as hugs and sharing coffee. Then I drove past another friend’s house and knew she was home but had to keep on driving.

It’s not the same. Rarely would friends come into my house, we always met at the coffee shop or went to the movies or met up for lunch. None of those options now, so thank heavens for phones. Imagine the meet up well will be having when all of this has settled down.

My friend has just completed her first quilt – it’s beautiful and she’s so proud of it and would love to show it off. She only lives 5 minutes down the road but I had to admire it via WhatsApp. 😥
Still, it won’t go off!
I love the look of that cake but they don’t seem to do proper cooking apples (like Bramleys) in France – or not that I’ve seen. I wonder if it would work with rhubarb.

We are fortunate to have things like WhatsApp, but it is not the same as being able touch the quilt and really admire. (Well done to your friend for finishing it.)
It is a very forgiving recipe, and I think that rhubarb would work well. Add a little dried fruits if you have some. The apples I used may have been Granny Smiths.

Yummy! Last week I made rhubarb cake, using the last of my frozen rhubarb. I thought of apple cake too, but I’m keeping my frozen apples to make fried apples to go with a pork roast instead. Your tea cup is beautiful!

Is your rhubarb home grown? Fried apples? I have stewed them for using with pork, but not fried. Can you tell me more?
The tea cup is very pretty, isn’t it? I have a few, so I will treat myself and use them for these posts.

The rhubarb comes from our neighbor, he hates it, so I try to cut it all down for him! My husband makes fried apples…some butter melted in a non stick skillet, add the frozen/semi thawed (previously blanched) apples, sprinkle a bit of brown sugar, and cook them. They brown a bit and have just a hint of caramel on them….so yummy with a pork roast for a Sunday dinner.
I think tomorrow I shall have tea or coffee in a pretty cup!

My cup of coffee with freshly made scones with jam and whipped cream was for yesterday – later today I will post on my blog why and what the spread looked on my especially cleared dining/work table was for…

(I was going to post last evening, but the timetabling for the day got completely out of kilter, even though I’d nothing much else to do at home, locked-in)!

The cake looks interesting, I may have to give that try, when I’ve consumed the baking of the last few days…and yes my waistline is possibly suffering as well…

Your scones looked great! There is an art to baking a decent scone. The friend who gave me the apples tells the story of her Gran. She would greet you at the front door, and almost by the time you had walked down the hall the scones were made, baked and on the table. ☺️

I saw this too late to add my banana bread with sultanas and dark chocolate chips. By the time I read it, the loaf was mere crumbs. Never mind, maybe next time. I’ll be making pineapple cake again soon, my absolute favourite for total ease and simplicity of ingredients. That seems to disappear very fast too, for some reason….

The belly is grumbling!!! I make an “Irish” apple cake that is pretty similar. Again, why do these things have nationalities? Does it make them sound more interesting? I mean, I understand my Irish Whisky Cake recipe…it calls for Irish whisky. Anyway….I’ll be waiting for you to send me a slice of your yummy cake.
